Mt. Fuji

The gentle spring water of Fuji.

At the foothills of Mount Fuji, Fuji Nishiki Sake Brewing has been using the soft spring water of Mount Fuji as brewing water since its establishment during the Genroku era. This spring water is collected as rainwater seeps into the ground, forming a large reservoir deep underground. Over a span of 70 years, the water undergoes natural filtration, protected by the dense lava bedrock, creating a pristine water source.

Utilizing the knowledge passed down over three centuries from the abundant spring in the Yuzuno Village, where the water emerges as a very soft, low-mineral water with a hardness of 32mg, we are dedicated to the art of brewing sake. Our goal is to become a beloved sake producer by striving to create delicious sake, driven by the heritage techniques nurtured by this bountiful water for 300 years.
